TWD: Lenox Almond Biscotti

Ok, back on track. This week's TWD is Lenox Almond Biscotti. I was very excited about this one, as almond is one of my favorite flavors, and I have really grown to love biscotti.

This week's recipe was chosen by Gretchen at Canela and Comino. I thought the recipe was really interesting, and only having made "cheater biscotti" (from a cake mix) in the past, I was really excited to try this out.

The flavor did not disappoint, but, I have to admit being disappointed in the texture. I thought the dough was a little sticky to work with, and I didn't get that "biscotti shape" when I baked them. Also, they didn't come out nearly as dry as I thought they should be, which I guess is a good and bad thing....and I didn't like the cornmeal texture.


All that being said, the taste is AWESOME, and I will certainly be eating these till they're gone!

they look great! i think the cornmeal made a real difference in both the taste and texture, but then i like cornmeal. i've never heard of biscotti made from a cake mix, that's so unexpected!

I thought the cornmeal would be strange too but they turned out great! I had never heard of "cheater biscotti" from cake mix before!

I think yours look fine, and as long as they taste good, who cares how they look?

I really liked these, so glad you did, too. I suggest refrigerating the logs, baking sheet and all, for about 20 minutes before popping them in the oven to reduce the spreading.

I had a little trouble with the shape too...however the taste is so divine it doesn't matter what they look like :)

They look great! I've never made biscotti from a box, but I bet your homemade version was better!
